We timed our visit for February specifically to catch harvest season, and watching workers hand-pick red coffee cherries across the hillside plantations gave the whole tour a different weight than it would have had after the season ended. Café Ruíz's three-hour afternoon tour, about 35 dollars including transport, walked us through every step from planting to roasting to a final tasting. A separate side-by-side tasting at another farm covered eight different coffee strains, which finally made clear how much processing and variety change the final cup. Sitting at 1,200 meters in cloud forest, Boquete stayed noticeably cooler than the Panama lowlands, and we were glad we'd packed a light jacket for evenings.

January is dry season in Panamanian terms - locals call January to April summer - and in Boquete it is also the windy half, with the winds starting in January and running to March or April, fierce in places because the valley is a patchwork of micro-climates. What confuses the classification is the bajareque, the fine misting rain that drifts in on the breeze, and it is why our row shows 19.8 precipitation days in a dry-season month while carrying only 91.3mm. Regulars are clear that it stops nothing - hiking, rafting and ziplining all run through it, and tours are not usually cancelled for wind either. The record: 24.1C days that feel like 27C, 17.2C nights, humidity 83 percent and 10.5 hours of sun.
